Trincheras Geisha
Geisha / 1400 masl / semi-washed
Producer José Cienfuegos manages the 100 hectare farm known as trincheras in Ohuapan, Veracruz. The famed geisha cherry is selected at its optimal point of ripeness. This cherry is then immediately pulped and fermented anaerobically for 48 hours. Following the initial fermentation, the coffee is submerged in water and patio dried for 15 days with a small percentage of mucilage. The result is a beautifully processed geisha, flush with floral and fruit notes.
